LHF was created and is owned by Christen Knowles, a diagnosed Celiac who found the available food in large grocery stores and even smaller heath food stores unacceptable. Not only was the variety extremely limited, but a lot of the products seemed to only satisfy the demand for something gluten-free. Being the true “foodie” that she is, Christen set out to make herself meals and treats that tasted as good as the foods she grew up with. At first, she experimented with different flours like a mad scientist until the flavors and textures were perfect.

After 7 years of perfecting gluten-free cooking and baking, Christen mastered food and baked goods with her own recipes, involving complicated techniques and the perfect blend of different flours. She provided a local cafe in Oceanside, CA with some of her baked goods, including cinnamon rolls, brownies, coffee cake, lemon bars, cookies and whatever else she felt like eating that day. What she learned was most of the cafe’s patrons who were buying the products weren’t even gluten-free! They were buying them because they were delicious.
